Mango Cheesecake with Popcorn Topping

Recipe (English):

Ingredients:

  • 200g digestive biscuits
  • 100g unsalted butter, melted
  • 400g cream cheese
  • 200ml whipped cream
  • 100g sugar
  • 2 ripe mangoes (cubed)
  • 1 tbsp gelatin
  • 50ml hot water
  • Mango puree for glaze
  • Popcorn for garnish

Instructions:

  1. Crush the biscuits and mix with melted butter. Press into a springform pan to form the base. Chill.
  2. Beat cream cheese, sugar, and whipped cream until smooth.
  3. Dissolve gelatin in hot water and mix into the cheese mixture.
  4. Fold in mango cubes, pour mixture over the base, and refrigerate until set.
  5. Pour mango puree on top and refrigerate until firm.
  6. Garnish with popcorn before serving.
